Chasing the Smoke: Hecho En Texas Barbecue’s Jamie Galvan Nominated for ‘Pitmaster of the Month’

CAMERON, TX — There is ordinary dedication, and then there is the kind of relentless hustle that builds a local staple from the ground up. For Jamie Galvan, owner and pitmaster of Hecho En Texas Barbecue, that hustle has earned him a well-deserved spotlight on the state-wide stage.
Galvan was recently nominated for the prestigious "Pitmaster of the Month" honors on texas-barbecue.com — a nod not just to his exceptional smoked meats, but to the inspiring journey it took to bring them to the Cameron community.
The nomination, submitted by his daughter Keagan Galvan, highlights a classic Texas story of grit, family pride, and determination. Before Hecho En Texas became a full-time reality at 1511 North Travis Avenue, it was a dream fueled by sheer passion and very little sleep.
While pulling grueling 80-hour workweeks as a car sales manager, Jamie refused to let his culinary ambitions sit on the back burner. Instead, he spent his single day off each week firing up the pits, pouring his limited free time into perfecting his craft and serving up barbecue to hungry locals.
What started as a one-day-a-week side gig quickly caught fire. Driven by a "never-give-up" attitude, Jamie managed to transition his part-time passion into a thriving, full-time operation in just three years.
"He pours his heart and soul into his work every single day," Keagan shared in the nomination. "He has shown me what it looks like to love what you do, be good at it, and constantly be willing to adjust to the world around you. He’s so deserving of pitmaster of the month, I couldn’t think of someone better!"
That ability to adapt and pour everything into the craft is exactly what makes small-town Texas barbecue joints the heartbeat of their communities. Jamie’s evolution from the car dealership showroom to the smokehouse is a masterclass in what happens when raw talent meets an unstoppable work ethic.
Whether you are a loyal regular or have yet to experience the heart and soul Jamie puts into every slice of brisket, there has never been a better time to drop by, grab a plate, and celebrate one of Cameron's own making waves in the Texas barbecue scene.
