Beating the Texas Heat, One Taco at a Time
This week’s recipe is a summer lifesaver: Slow Cooker "Cool Kitchen" Shredded Chicken Tacos. It requires less than ten minutes of prep time, keeps the kitchen perfectly cool, and yields a mountain of tender, flavorful chicken that can feed a crowd.
Cameron, TX - There is a particular kind of bravery that belongs entirely to Texans in July. It’s the courage it takes to open the front door at five in the afternoon, only to be hit by a wall of humidity that feels like a physical slap.
By the time the weekend rolls around, the last thing anyone wants to do is stand over a hot stove or—heaven forbid—turn on the oven. Cooking a big dinner for the family suddenly feels less like a chore and more like a tactical error.
That is where the trusty slow cooker comes to the rescue.

Set a toppings bar on the counter with some shredded cheese, fresh cilantro, and lime wedges, and let everyone build their own. The kitchen stays cool, the cook stays happy, and the family stays full.
Recipe of the Week: Slow Cooker "Cool Kitchen" Shredded Chicken Tacos
Prep time: 10 minutes | Cook time: 3 to 4 hours (High) or 6 to 8 hours (Low) | Servings: 8 to 10
Ingredients
- 3 lbs boneless, skinless chicken breasts or thighs
- 1 packet (1 oz) taco seasoning
- 1 jar (16 oz) of your favorite salsa (thick and chunky works best)
- 1 tbsp lime juice
- 2 tbsp fresh chopped cilantro (optional)
- For serving: Corn or flour tortillas, shredded lettuce, diced tomatoes, cheese, sour cream, and lime wedges.
The Method
1. Layer the Chicken
- Place the chicken breasts or thighs in an even layer at the bottom of your slow cooker.
2. Season and Sauce
- Sprinkle the taco seasoning evenly over the top of the chicken. Pour the entire jar of salsa over the chicken, making sure it is mostly covered.
3. Slow Cook
- Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until the chicken is tender enough to easily pull apart with a fork.
4. Shred and Finish
- Remove the chicken from the slow cooker and place it on a cutting board or large bowl. Use two forks to shred the meat. Return the shredded chicken to the slow cooker to soak up the juices, and stir in the lime juice and fresh cilantro.
Chef's Flare: The Dorito Taco Salad Upgrade!
If you want to add a fun, crunchy twist to this meal, skip the tortillas entirely and make a loaded taco salad. Use a big bowl of crushed spicy or cheesy Doritos as the base of your salad. Top the chips with a generous scoop of the warm shredded chicken, shredded lettuce, tomatoes, cheese, and a dollop of sour cream.
Pro-Tip: Don't forget the green! Freshly diced avocado or a big scoop of homemade guacamole makes a rich, creamy addition that perfectly complements both the classic tacos and the crunchy Dorito salad.
