Between smoke-kissed briskets, charred burgers, and standing out in the late-summer Texas heat with tongs in hand, most of us are ready to hang up the barbecue apron for a few days.

After three days of heavy cookout fare, nothing hits the spot quite like a big pot of Posole Verde. It bridges the gap between comforting stew and bright, crisp freshness. By letting the slow cooker do the heavy lifting indoors, your kitchen stays cool, the chicken gets melt-in-your-mouth tender, and the broth takes on the smoky, buttery warmth of fresh roasted chiles.
The real magic happens at the table: ladle it steaming hot into wide bowls and pass around plates of crunchy shredded cabbage, thinly sliced radishes, creamy avocado, and plenty of fresh lime wedges. It’s an effortless weeknight dinner that feeds a crowd and gives the grill boss a well-earned break.
Slow-Cooker Hatch Green Chile Chicken Posole Verde
Prep Time: 15 minutes Cook Time: 6 to 7 hours on Low (or 3 to 4 hours on High)
Servings: 6 to 8
Ingredients
For the Pot:
- 2 lbs boneless, skinless chicken thighs
- 1 lb fresh tomatillos, husked, rinsed, and quartered
- 1 cup roasted Hatch green chiles (mild or medium), peeled, seeded, and chopped
- 1 medium yellow onion, diced (divided)
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried Mexican oregano
- 4 cups low-sodium chicken broth (divided)
- Two 15-oz cans white hominy, rinsed and drained
- 1 tsp kosher salt (plus more to taste)
- /2 tsp freshly cracked black pepper
For Serving (The Fresher, The Better):
- Finely shredded green cabbage
- Crisp red radishes, sliced thin
- Diced avocado
- Fresh cilantro leaves
- Fresh lime wedges
- Warm corn tortillas or crispy tortilla chips
Instructions
- Make the Chile Verde Base: In a blender or food processor, combine the quartered tomatillos, chopped Hatch chiles, half of the diced onion, minced garlic, cumin, oregano, and 1 cup of chicken broth. Pulse until blended smooth with just a slight texture remaining.
- Set the Slow Cooker: Arrange the chicken thighs in the bottom of your slow cooker. Scatter the remaining diced onion over the chicken, then pour the blended verde sauce and the remaining 3 cups of chicken broth over top. Stir in the salt and black pepper.
- Cook Low and Slow: Cover with the lid and cook on Low for 6 to 7 hours (or High for 3 to 4 hours) until the chicken is fork-tender.
- Shred and Simmer: Carefully remove the chicken thighs to a cutting board and shred using two forks. Return the shredded meat to the slow cooker and stir in the drained hominy. Cover and cook on Low for an additional 20 to 30 minutes to let the hominy soak up that rich, smoky broth.
- Garnish and Enjoy: Taste and adjust the seasoning with an extra pinch of salt or a splash of lime juice if needed. Ladle into deep bowls and serve with cabbage, radishes, avocado, cilantro, and warm tortillas on the side.
