The Journey from the Pacific Northwest to the Texas Heart

Before bringing scratch-made goodness to Milam County, owner and baker Samantha spent years honing her craft in the picturesque mountains of Washington State. A graduate of Le Cordon Bleu’s Western Culinary Institute in Portland, Oregon (class of 2007), Samantha spent seven years as the resident pastry chef for the luxury Sun Mountain Lodge in Winthrop, Washington.

However, life shifted when she and her husband, Jeremy—also a classically trained chef—welcomed their first child, Christopher. Seeking a close-knit support system for their son, the family looked to Texas, where Samantha’s parents and brothers had already relocated in 2023.

Leaving behind the fluctuating resort economy of the Northwest, the family packed up and moved to Texas in August 2023. Samantha initially looked for local baking gigs, but finding a void for a dedicated artisan bakery in the area, she and her family decided to build one from the ground up. While inquiring about business insurance one afternoon, an agent pointed them toward an available building right on the town square. By late November 2023, Shirley Mae’s Bakery officially opened its doors.

Honoring a Legacy: The Story Behind the Name

The bakery is named in loving homage to Samantha’s grandmother, Shirley Mae, who heavily inspired her culinary path. Growing up, Samantha was her grandmother's "designated taster" during big family functions and holiday baking sessions.

Many of the bakery's most cherished menu items come directly from Grandma Shirley’s original, handwritten recipe cards. In a wonderful touch of nostalgic design, some of those very same clipped recipes have been preserved and inlaid right into the bakery tabletops for patrons to read.
