- Cook time: 2 to 3 hours
- Servings: 12
Ingredients:
- 2 ounces whole wheat penne pasta, dry
- 10.75 ounces reduced-sodium cream of chicken soup
- 10.75 ounces reduced-sodium cream of mushroom soup
- 10 ounces diced tomatoes with green chiles
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 white onion, diced
- 4 ounces canned sliced mushrooms, drained
- 2 cups chicken breast, chopped
- 2 cups reduced-fat shredded cheese
Instructions:
- Par-boil the pasta: Boil the dry penne pasta in water for just 5 minutes. Drain the pasta and place it directly into your slow cooker. (Note: Par-boiling ensures the pasta cooks perfectly without getting mushy in the slow cooker!)
- Mix it up: Add all of the remaining ingredients—the soups, diced tomatoes, peppers, onion, mushrooms, chopped chicken breast, and shredded cheese—to the slow cooker. Stir everything together until well combined.
- Slow cook: Cover and cook on Low for 2 to 3 hours.
